Chef de Delicatessen
Position Summary
The Elk Store is hiring a Chef de Delicatessen (CdD) who is up to the task of taking our deli to the next level. The Elk Store is a small, family-run general store and deli on Highway 1 in beautiful Elk, California. We are looking for an enthusiastic, creative, and hard-working person to join our team. The CdD will be responsible for day-to-day operations in the kitchen, including but not limited to menu decisions, ordering, food preparation, training staff, ensuring food safety and freshness, and providing excellent customer service. The Elk Store is an historic building with a modified kitchen so creativity within the space will serve the CdD well. This position will be 25+ hours per week. The starting salary for this position is $20 per hour plus tips, a free lunch, and 20% off in-store purchases.

Duties and Responsibilities
- Work closely with the store owner to set menu. There is opportunity for a creative overhaul of the menu. Work closely with owner to analyze profit margins and set prices accordingly.
- Creative opportunities abound. Smoking or curing meats, soups, salads, appetizers, catering menu, etc.
- Deli preparation: ensure deli case is stocked with prepared condiments, vegetables, meats, cheeses, breads.
- Complete orders for the deli from multiple vendors, research new products.
- Check-in vendors and assure quality of goods delivered.
- Prepare deli ingredients, including operation of wood-fired smoker and use and maintenance of a slicer.
- Train deli staff on all food preparation and systems.
- Adjust current food prep systems as necessary, create new systems to streamline efficiency and cost-effectiveness.
- Provide excellent customer service.
- Ensure and maintain food quality and safety, food production records, refrigeration temperatures, etc.
- Experience in kitchens necessary; experience in front-of-house or retail a plus.
- Wood-fired smoker/pit-master skills necessary.
- Supervisory experience.
- Experience with food ordering and cost-benefit analysis needed.
- Familiarity with or ability to learn current point-of-sale system.
- This is a small, family-run business, so flexibility is needed. Staff work together and cover for each other for illnesses and time-off.
